Gluten Free Vegan Date Bars

Yields makes 20 bars 
FILLING
  • 1 cup shredded unsweetened coconut

CRUST


  • 1/2 cup ground almonds

Place all ingredients in the filling into a saucepan and cook the ingredients until the dates can be crushed with a potato masher easily.

Set aside while assembling the crust.

Put 1 cup old fashioned oats into food processor and process until it is of flour consistancy then place in a large mixing bowl.

Melt the coconut oil and add it to the bowl.

Add the rest of the ingredients and mix thoroughly.

Prepare a 9x13 baking pan with a non stick spray.

Put 2/3 of the crumble in the bottom of the pan and pat it down.

Spread the filling on the bottom crust then top it with the rest of the crumble.

Let it rest and soak up the remaining liquid from the filling then,

Bake at 350 degrees until the crust is browned. (approx 45 min)

 This is a stage 2 food for an anti-inflammatory diet.
