Lemon Grape Leaf Soup

1/4 cup olive oil

2Tbls organic coconut oil

3 cups chopped onion

2 Boneless skinless chicken breasts, Leave out to create a vegan version.

1 Tbls chopped garlic

3 cups chopped fresh or frozen grape leaves (make sure they are green on both sides. Do not use leaves that have the white or pale green fuzz on the back)

2 cups fresh mushrooms or 1 cup dried mushrooms

2 tablespoons better than boullion beef flavor, use tamari sauce for a vegan version.

3/4 cup Pink, Brown or Wild Rice

1 teaspoon pink salt

1 teaspoon black pepper

1 teaspoon tapatillo sauce

1/2 cup lemon juice

8 to 10 cups water

 

Saute all spices, leaves, veges and chicken until tender, add remaining ingredients and let simmer for three hours or until leaves are tender.

1 serving = 1 cup. Recipe yeilds 14 servings.
