Curried Mushroom Soup

2 Tbls organic coconut oil

2Tbls extra virgin olive oil

4 cups chopped onion

6 cups sliced/ chopped mushrooms of your choice, I like Shitake.

3 Tbls finely chopped garlic

Saute all of this together until the color is a dark golden brown then add,

1 tsp ground black pepper

3 tsp pink salt

2 Tblsp curry powder or paste

1 large avocado mashed

1 quart organic coconut milk.


Stir well and let simmer for 1/2 hour.

Serving size is 1 cup and contains

134 calories

8 gr fat  (good fat)

2.75 gr protein

10.45gr carb

 




Curried Mushroom Soup

To make this meal more hearty, add some Brown or Black rice.

If you are not dairy sensitive, a dollop of plain non-fat greek yogurt is fantastic!

This soup is very rich and flavorful, you can puree it to make a sauce for chicken, fish and veges.
