Basic cookie recipe

2 cups butter, soft

1 cup powered sugar

1 tsp salt

4.5cups flour

Mix well, roll into the shape you want then bake at 350 degrees until the bottom of the cookie is slightly browned.

This is what you add to the basic cookie recipe to make:

LIME COOLERS

Basic cookie recipe plus,

1 teaspoon Key Lime Essential Oil

2 Tablespoons Lime Zest

After baking, roll twice in sifted powdered sugar

LEMON COOLERS

Basic cookie recipe plus<

1 teaspoon Lemon Essential Oil

2 Tablespoons Lemon Zest

After baking, roll twice in sifted powdered sugar

PEPPERMINT  ROUND

Basic cookie recipe plus,

1 teaspoon Peppermint Essential Oil

Roll out balls and flatten them on the cookie sheet with a glass bottom dipped in sugar.

After baking, Let cool.

Icing

1 Tablespoon Butter softened

2 tablespoons whole milk

½ teaspoon peppermint extract

Mix it then pipe a circle onto the cookie and garnish with any peppermint candy you like.

ANISE COOLERS

Basic cookie recipe plus,

1.5 teaspoons anise essential oil

2 Tablespoons Anise seed

Roll out balls and flatten them on the cookie sheet with a glass bottom dipped in sugar.

After baking, Let cool.

Icing

1 Tablespoon Butter softened

2 tablespoons whole milk

½ teaspoon anise extract

Mix it then pipe a circle onto the cookie

SCOTISH SHORTBREAD

Use the basic cookie recipe but substitute the powdered sugar with brown sugar.

Roll out balls and flatten them on the cookie sheet with a glass bottom dipped in sugar.

Poke each cookie with a fork

After baking, Let cool.

Raspberry Jam Cookie

Basic cookie recipe plus,

1.5 teaspoons almond extract

Roll out balls and use an implement that will put a nice dent into the cookie, dipping in sugar each time.  Fill the cookie with raspberry jam and bake as per the directions above

Ginger Brownie Bites

2 cups sugar

1.5 sticks butter soft

1/2 teaspoon salt

2 eggs

1 cup dutched cocoa

2 teaspoons ginger grated

1 cup flour

Bake at 350 degrees until toothpick comes out clean

Baklava, Lemon Coolers, Jam Thumb print, Lime Coolers, Scotish Shortbread, Peppermint Rounds, Anise Coolers, and Ginger Brownies.
