Chile Coconut Lime Bar

Original recipe makes 1 - 9x9 inch pan 
Makes 9 servings

Crust

1 cup flour

1 cup coconut flour

1/2 cup butter

1/4 cup coconut sugar

1/2 teaspoon pure Vanilla extract

1/4 teaspoon salt

1/2 tsp cayenne pepper

 

Filling

3 eggs

1 egg yolk

1 cup coconut sugar

1/4 cup fresh lime juice

1 tablespoon lime zest

1 tsp green tobasco


Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2.  Grease a 9x9 inch pan.
  3. In a medium bowl, stir together  flour, salt and coconut' sugar. Blend in the melted butter, and vanilla. Press into the bottom of the prepared pan.
  4. Bake in the preheated oven for 15 minutes, or until golden.
  5.  In a large bowl, beat eggs until light. Combine the coconut sugar,  Stir the sugar mixture into the eggs. Finally, stir in the lemon juice and the lemon zest. Mix well.
  6.  Pour over the prepared crust and return to the oven.
  7. Bake for an additional 30 minutes or until bars are set.
  8.  Allow to cool completely before cutting into bars.
  9. Garnish with flaked coconut and lime peel.
